Last night I made “Smoked Chicken Breasts”, based on a YouTube video from Mad Scientist BBQ. The video is called “How to Smoke Chicken Breast“. This is the third time I have followed one of his recipes and I ended up with a very positive result. The chicken was especially juicy with a nice smokey taste. Preparation was simple and his instructions were spot on. When the weather is good I like to use the smoker for a little variety.

  1. Start by doing a dry brine. Sprinkle salt on both sides of breasts, cover with cling wrap and refrigerate for at least 2 hours.
  2. Start smoker and preheat to 225.
  3. Season chicken breasts with Pepper on both sides.
  4. Put on smoker for 1-1.5 hours. You want the surface of the breast to dry out some and there is good color.
  5. Wrap each breast in foil after placing a large pat of unsalted butter on the breast.
  6. Return breast to smoker at 275 or into oven at 275. Cook until internal temperature is at 155 for at least 1 minute.

Remove from smoker or oven and rest for at least 5 minutes. Pour any butter in foil over the Smoked Chicken Breasts when serving.
