This is a recipe for “Broiled Fish” that a guest showed me when they stayed with us. They were on their way back from a houseboat trip in Canada. He had some nice walleye fillets that we used. I think this would work with just about any fish that had some thickness to it. I do not think it would work well with a sun fish fillet, although I have not tried it.
- Place parchment paper on a cookie sheet. Trim to size, since we will be broiling it.
- Move an oven rack near the top but not the top of the oven. Preheat broiler on high.
- Remove skin and any bones from the fish fillets. Cut into pieces between 1-1/2″ to 2″ square. Place on the prepared cookie sheet. Brush with melted butter. Season with lemon pepper and salt. Turn over, brush on butter and season the other side.
- Place the cookie sheet with the fish, in oven and broil for a few minutes. The time will depend on the thickness of the fish. For an average walleye fillet 3-5 minutes should be fine. Check and when the fish starts to flake, remove from oven.
- Turn the fish over and then sprinkle with shredded Parmesan cheese. Put back in oven for a couple more minutes. When the cheese is melted and the fish flakes easily it is done.
I usually like my fish fried but this was a really nice recipe for Broiled Fish. It was easy to prepare, the cook time was pretty short and cleanup was easy.
