Broiled Fish

This is a recipe for “Broiled Fish” that a guest showed me when they stayed with us. They were on their way back from a houseboat trip in Canada. He had some nice walleye fillets that we used. I think this would work with just about any fish that had some thickness to it. I do not think it would work well with a sun fish fillet, although I have not tried it.

  1. Place parchment paper on a cookie sheet. Trim to size, since we will be broiling it.
  2. Move an oven rack near the top but not the top of the oven. Preheat broiler on high.
  3. Remove skin and any bones from the fish fillets. Cut into pieces between 1-1/2″ to 2″ square. Place on the prepared cookie sheet. Brush with melted butter. Season with lemon pepper and salt. Turn over, brush on butter and season the other side.
  4. Place the cookie sheet with the fish, in oven and broil for a few minutes. The time will depend on the thickness of the fish. For an average walleye fillet 3-5 minutes should be fine. Check and when the fish starts to flake, remove from oven.
  5. Turn the fish over and then sprinkle with shredded Parmesan cheese. Put back in oven for a couple more minutes. When the cheese is melted and the fish flakes easily it is done.

I usually like my fish fried but this was a really nice recipe for Broiled Fish. It was easy to prepare, the cook time was pretty short and cleanup was easy.
