This post is all about making a Low Carb Drunken Turtle sundae. So, you ask, what is a drunken turtle?
This all started when friends brought us a bottle of “Salted Caramel” distilled liquor. The label says “Neutral Spirit Distilled from Cane with Natural Flavorings…”. Yes, it tastes like salted caramel. It is really good over ice cream.
While we were enjoying it over vanilla ice cream someone pointed out that it would be really good with hot fudge sauce. A turtle sundae with a kick, hence the name “Drunken Turtle”. Since we try to eat low carb the challenge was to make a low carb version.
The ice cream was easy. Breyers makes a low carb vanilla that is actually pretty good. You only use a splash of the liquor so that does not count. The remaining ingredient is the hot fudge. I found a keto recipe that I used as a starting point.
Making the Hot Fudge Sauce
To make the low carb hot fudge sauce I started with a “Keto Hot Fudge” recipe I found on the Internet (linked). That recipe made a lot more than I needed so I scaled it back.
I started with 1/2 cup of cream in a small sauce pan. I added about 2-2/3 Tablespoons of Monkfruit sweetener and whisked over medium heat.

While that was warming up I used a knife to finely chop about an ounce of unsweetened chocolate.

When the cream and sweetener started to simmer, I turned off the heat, added the chopped chocolate and whisked it together. I added about 1/4 teaspoon of vanilla, whisked again then let sit for 5 minutes.
After the wait, I whisked it again and it was ready to use.
Putting It Together
Assembly is easy. Put ice cream in a bowl, add a couple tablespoons of fudge sauce and a splash of the Salted Caramel liquor and you have a drunken turtle.

Summary
Using low carb ice cream with the low carb hot fudge and ignoring any carbs in the liquor, you get a Low Carb Drunken Turtle.
So deliciously sinful and worth every teeny-tiny carb!
